This is a fabulous greens recipe, done chinese style. I call it a greens recipe rather than a kale recipe, bok choy recipe or chard recipe because you can use any of those, a mix of them or any other green you choose including chinese cabbage.
1.5 pound Mustard greens, or kale, turnip greens, chard, beet greens, bok choy, or chinese cabbage, or a mixture of any of them
2 tablespoon Oil
1 Clove garlic, minced
4 Mushrooms, sliced thinly
1 Onion, sliced
0.5 Red pepper, small, sliced
2 tablespoon Soy sauce, optional
