The folding process creates a multi-layer pancake. Two outside layers: crisp and spicy. The remaining inside layers: softer and milder. So this helps to create great taste layers too. How to Make Chinese Style Layered Pancakes Recipe

STEP 01

Place 1000 gm plain flour in a large mixing bowl, add 2 tbsp oil.

Gradually pour in the water in batches and keep mixing till the flour comes together. Then knead to make a smooth dough.

Cover the bowl with a plastic film and let it rest for 2 hours. After 2 hours uncover the dough and knead it well. Then cover the dough and rest for another hour.

Next remove the dough from the bowl and divide it into 3 equal portions.

Dust a flat clean work surface with flour and roll out a portion out the dough to 2mm thickness.

Remove the dough from the bowl and divide in equal portions. Dust in flat surface and roll out a circle of 30mm thickness. Drizzle 3 tbsp oil oil over the dough and apply it evenly over the surface of the rolled out sheet.

Firmly roll the sheet from one end to the other and then divide it into 3 equal pieces.

Stretch each piece till it is twice its original length.

Twist and roll form one end to the other and tuck the ends under the bottom.

Roll out these disc shapes to a sheet of 5 mm thickness.

Heat a little oil in a pan on low to medium heat and place a rolled out pancake in the pan.

Cook on each side for 2 minutes and keep flipping over until cooked through. Serve with stew or soup.
