Tasty and spicy uttara karnataka ennegayi. It is made from brinjal, tamarind water, jaggery, roasted peanuts, roasted seasme seeds and seasoning ingredients.
STEP 1.Grind the sesame seeds and coconut and keep them aside.
STEP 2.Now grind the garlic, curry leaves and onions. After one grind add the tamarind, jaggery, red chilli powder, turmeric powder, coriander powder and garam masala and grind again.
STEP 3.Mix the sesame powder and the masala together on a plate. Add onions, coriander, salt, and oil. Mix the stuffing.
STEP 4.After mixing them, add them in the cut-up brinjals, using light hands.
STEP 5.Take a pan, heat a cup of oil and add a spoon of cumin seeds, dry red chilies, and a pinch of asafoetida. After they roast add 5-6 curry leaves and then roast the stuffed brinjals.
STEP 6.Cover and cook. Make sure they cook from all sides. Add the extra masala on it if left. (optional)
STEP 7.Cook for another 15-20 minutes. Its ready to serve.
