Ingredients for Ennegayi Recipe

  • 10 No.s Brinjal
  • 1 tablespoon Jaggery
  • 1 cup Tamarind
  • 1 cup Coconut
  • 1/2 cup Roasted peanuts
  • 1/2 cup Roasted sesame seeds
  • 1 tablespoon Coriander powder
  • 1 tablespoon Red chilli powder
  • 1 tablespoon Turmeric powder
  • 1 tablespoon Garam Masala
  • 2 No.s minced Garlics
  • 1 No.s Chopped Onions
  • As required a few Curry leaves
  • As required A few Coriander leaves for serving
  • As required Oil  for cooking
  • 1 As required tbsp Salt

Directions: Ennegayi Recipe

  • STEP 1.Grind the sesame seeds and coconut and keep them aside.
  • STEP 2.Now grind the garlic, curry leaves and onions. After one grind add the tamarind, jaggery, red chilli powder, turmeric powder, coriander powder and garam masala and grind again.
  • STEP 3.Mix the sesame powder and the masala together on a plate. Add onions, coriander, salt, and oil. Mix the stuffing.
  • STEP 4.After mixing them, add them in the cut-up brinjals, using light hands.
  • STEP 5.Take a pan, heat a cup of oil and add a spoon of cumin seeds, dry red chilies, and a pinch of asafoetida. After they roast add 5-6 curry leaves and then roast the stuffed brinjals.
  • STEP 6.Cover and cook. Make sure they cook from all sides. Add the extra masala on it if left. (optional)
  • STEP 7.Cook for another 15-20 minutes. Its ready to serve.
