Enchilada Suiza Mexican Lasagna Recipe

Cooking Directions

• STEP 1.Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
• STEP 2.In a large skillet, heat oil over medium heat. Add diced onion and cook until softened.
• STEP 3.Add minced garlic and cook for another minute. Then, add shredded chicken, cumin, chili powder, salt, and pepper. Stir well to combine.
• STEP 4.In a blender, combine tomatillos, cilantro, sour cream, and chicken broth. Blend until smooth.
• STEP 5.Spread a thin layer of the green sauce on the bottom of the baking dish. Place a layer of tortillas on top, followed by a layer of the chicken mixture. Repeat the layers until all the ingredients are used, ending with a layer of tortillas.
• STEP 6.Pour the remaining green sauce over the top and sprinkle with shredded cheese.
• STEP 7.Cover the baking dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
• STEP 8.Remove from the oven and let it cool for a few minutes before serving.
• STEP 9.Garnish with chopped cilantro and serve hot. Enjoy!
