Directions : Chinese Deep Fried Battered Pork Belly Recipe

STEP 1.1 in a mixing bowl, place 500 gm pork belly cut into 4 cm long pieces, then into 1 cm long strips, add 5 gm finely chopped ginger, 1 clove finely chopped garlic, 5 gm ground sichuan pepper, 2 tsp cooking wine, 2 tsp light soy sauce and mix together well. Keep aside.

STEP 3.2 in a bowl crack 8 eggs, 200 gm corn flour and mix well to make a lump-free batter.

STEP 4.3 pour the batter over the marinated pork and mix to evenly coat the pork pieces.

STEP 5.4 in a wok heat 1 ltr oil on medium -low heat, add the batter coated strips of pork on at a time into the hot oil and deep fry for 6 minutes till golden.

STEP 6.5 do this in batches, do not over crowd the wok.

STEP 7.6 use a slotted spoon to remove and drain the pork.

STEP 8.7 serve hot.
