• 1 Large onion, peeled and chopped

• 2 Courgettes, diced
• 0.5 teaspoon Salt
• 1 Red pepper, deseeded and chopped
• 25 gram Large green olives, pitted and halved
• 1 tablespoon Capers, Drained And Rinsed
• 2 tablespoon Caster sugar
• 4 tablespoon Red wine vinegar
