Rice Noodles & coconut curry are south indian dishes. To make more healthy i add spinach puree in Rice Noodles & coconut curry is best combination with this Spinach Rice Noodles.
Ingredients For "Spinach Rice Noodles with Coconut Curry " Recipe
1 Cups Rice flour
2 Tbsp Corn flour
0.5 Cups Blanched spinach puree
2 Cups water
0.5 Tsp salt as per taste
3 Tbsp Coconut oil
2 Pieces Dry Red Chillis
1 Tbsp Mustered seeds
0.5 Tsp Fenugreek
1 g reen Chilli
0.5 Tbsp Fine chopped ginger
1 Tbsp Fine chopped garlic
0.5 Cup Sliced onion
0.5 Cups Fine chopped tomatoes
1 Tsp Red chilli powder
0.5 Tsp turmic powder
0.5 Tsp Black Pepper Powder
1 Tbsp Tamarind water
1 Cup Coconut milk
1 Tsp salt as per taste
Directions : "Spinach Rice Noodles with Coconut Curry " Recipe
STEP 1.First make Spinach Rice Noodles.
STEP 2.For it first take a deep pan. Take water, salt , oil & blanched spinach puree & let it boil . Once water boilied add rice flour & corn flour gradually & stir continously so that no lums formed.
STEP 3.Stir continously untill it becomes like a dough. Now steam it with covered lid about 10 to 15 minutes on a slow flame.
STEP 4.Now take it from gas & take a dough in a plate. Bind a smoth dough.
STEP 5.Now make small cylinder rolls & take it in a machine & make Noodles on a greesed plate. Now again steam it for 10 minutes.
STEP 6.Our Spinach Rice Noodles are ready.
STEP 7.Now make Coconut Curry.
STEP 8.For it in a pan take coconut oil. Add Mustred seeds, Fenugreek. Once Mustred seeds gets cracked add curry leaves, red chillis, green chilli, ginger, garlic & saute them. Now add sliced onion & saute untill it becomes light pink. Then add tomatoes & other spices & cook them untill tomatoes becomes soft. Now add little coconut milk & give a quick one boil. After one boil add remaining coconut milk & give again a quick one more boil. In last add tamarind water. Now switch off the gas.
STEP 9.In a serving plate take Spinach Rice Noodles & coconut curry. Now enjoy this yummy combination.
