A protein-packed breakfast made from a fermented batter of a variety of dals and skillet fried with vegetables and tempered with oil, mustard seeds and sesame seeds
STEP 1.Wash and soak 1 cup raw rice, ½ cup toor dal, ½ cup chana dal, ½ cup green moong dal and ¼ cup white urad dal for 4 hours.

STEP 1.In a blender add 1 cup soaked raw rice, ½ cup toor dal, ½ cup chana dal, ½ cup green moong dal and ¼ cup white urad dal.

STEP 1.Add 2 chopped green chillies, 1 tbsp chopped ginger, 1 cup yogurt (dahi/curd) and salt to taste. Blend to make a smooth batter.

STEP 1.Transfer to a large glass bowl. Cover and keep aside to ferment for 8 hours.

STEP 1.Then add 1 tsp enos fruit salt and ½ tsp turmeric (haldi) powder. Mix the fermented batter.

STEP 1.Add ½ cup steamed sweet corn, ½ cup finely chopped and steamed beans, ½ cup finely chopped and steamed carrot. Stir well to combine.

STEP 1.In a preheated pan add 1 tsp oil, 1 tsp mustard seeds, 1 tsp sesame seeds, ¼ tsp asafoetida (hing) and saute till sesame seeds begin to change colour.

STEP 1.Pour 1 to 2 ladles of handvo batter over the tadka and spread gently and evenly.

STEP 1.Drizzle oil around the handvo.

STEP 1.Cover and steam cook till the top is steamed. Flip it over and drizzle a little more oil and allow it the underside to cook.

STEP 1.Serve hot with tomato garlic chutney.
