Directions : Singapore Noodles Stir Fry Recipe

STEP 1.1 soak 100 gm thin rice noodles in hot water for 1 hour until soft, then remove, drain and keep aside.

STEP 2.2 in a wok heat 2 tbsp peanut oil, add 2 whisked eggs. Stir for 1 minute till scrambled and cooked. Then remove.

STEP 3.3 heat another 2 tbsp oil, add 2 thinly sliced spring onions, 3 thinly sliced red chillies, 3 mm finely chopped ginger, 2 finely chopped cloves and stir.

STEP 4.4 add 1 carrot cut into thin threads, 1 tsp curry powder, 1 tsp coriander powder, 1 tsp turmeric powder, 50 gm bean sprouts and stir fry for 1 minute.

STEP 5.5 add the fried eggs and stir together.

STEP 6.6 then add the noodles and salt to taste and stir fry for 3 minutes.

STEP 7.7 transfer onto a dish and serve.
