Ridge gourd is a seasonal vegetable and is very healthy. This chutney will rejuvenate your taste bud with its amazing ingredients and its low in calories.
STEP 1.Peel the hard skin off the ridge gourd. And chop them into small pieces.
STEP 2.Now in a kadai add 1 tbsp of oil and let it heat.
STEP 3.Now we will add the dry red chilies, cumin seeds, mustard seeds, chana dal, and urad dal and saute them at medium flame till the color of the lentils changes.
STEP 4.Now add turmeric powder, mix them, and then saute them.
STEP 5.Now we will add the chopped ridge gourd mix it well with the spices
STEP 6.Add salt to taste and mix it.
STEP 7.Cover it with a lid and let it cook for 3-4mins.
STEP 8.Keep stirring them now and then in between.
STEP 9.Don’t cook it for long. We need the gourd half cooked.
STEP 10.Once it cools down we will add it into the grinder and add 1 tbsp tamarind juice.
STEP 11.Blend it into a paste.
STEP 12.Take it out in a bowl. Have it with paratha or rice.
STEP 13.You can keep it for 2days in the freezer.
