  • 0.13 teaspoon Turmeric Powder
  • 1/4 teaspoon Red Chili Powder
  • 1/4 tablespoon Jaggery
  • As required Salt To Taste

Cooking Directions

  • STEP 1.Peel and chop the ridge gourd into small pieces.
  • STEP 2.In a pan, heat oil and add mustard seeds, cumin seeds, and curry leaves. Let them splutter.
  • STEP 3.Add chopped onions and saut茅 until they turn golden brown.
  • STEP 4.Add the chopped ridge gourd and cook for a few minutes until they become tender.
  • STEP 5.In a separate bowl, soak tamarind in water and extract the juice.
  • STEP 6.Add the tamarind juice to the cooked ridge gourd and mix well.
  • STEP 7.Add turmeric powder, red chili powder, jaggery, and salt. Mix everything together.
  • STEP 8.Let the gojju simmer for a few minutes until the flavors blend well.
  • STEP 9.Garnish with fresh coriander leaves and serve hot with rice or roti.
