STEP 1.Take 1 cup all purpose flour in a bowl, add some salt, 3 tablespoon ghee, add little by little water and kneed the flour to prepare dough.
STEP 2.Let it rest for 10 minutes
STEP 3.Soak moong dal for 2 hours before preparing this recepie
STEP 4.Grind the soaked moong, keep the dal thick.
STEP 5.Heat the pan, add some oil, cumin seeds, fennel seeds, black pepper and roast them for few minutes on low flames
STEP 6.Add green chillies, ginger chopped, asafoetida and gram flour roast on low flame.
STEP 7.Add the moong dal in the pan and roast with some salt, red chilli powder turmeric powder, coriander powder, roasted cumin powder, citric acid/mango powder, sugar, fresh coriander leaves and garam masala. Roast for 10 minutes.
STEP 8.Take a portion of the dough, kneed it to smoothen the surface and make small spheres, stuff th with the prepared dal and use gentle hands to shape the kachori.
STEP 9.In a deep frying pan, pre heat the oil and cook the kachori
