Tagine of meatballs cooked in a spiced tomato sauce and topped with eggs.This dish is prepared from ground beef or lamb and cooked in tomato sauce along with other ingredients.
STEP 1.Take a large mixing bowl, combine all the kefta (meat) ingredients, and mix them well.
STEP 2.Cover and let the meat rest for at least 30 minutes or 2 hours for the best results while preparing the rest of the ingredients.
STEP 3.Preparing the tomato sauce cut the tomatoes in half and grate them using the large holes of the grater. Discard the skin.
STEP 4.In a large and deep saucepan, drizzle the olive oil and heat on medium heat for 30 seconds.
STEP 5.Then add the minced garlic, chopped onion, and the grated tomatoes.
STEP 6.Add the spices (listed for the tomato sauce) and 2 tablespoons of chopped cilantro
STEP 7.Mix and cook on medium heat for around 20-25 minutes before adding the meatballs. Stir with a wooden ladle occasionally, to make sure that the bottom does not burn or stick. The goal is to get a thick and creamy tomato sauce at the end.
