A cheesy crispy Loaded Denver Omlet Muffin packed with protein is the absolute perfect make ahead breakfast or snack muffin for you or your kiddos on the go !
STEP 1.Chopped the chicken pieces and marinate with ginger garlic paste, pepper, salt and vinegar. Keep aside for 1 hour. Preheat oven to 180 degrees . Spray a muffin pan with cooking spray.
STEP 2.In a large bowl, combine thawed hash browns, tablespoon of olive oil, use your fingers to press them tightly and shape them into muffin pan and add a tablespoon of cheese into each one.
STEP 3.Bake at 180 degrees or until the edges have browned and the cheese has melted, about 15 minutes.
STEP 4.In a small bowl, whisk eggs and milk, salt and pepper. Add marinated chicken pieces, chopped onions, capsicum, tomato, salt.
STEP 5.Fill each muffin cup with egg mixture and top with more cheese. Place in oven and bake for 15 minute.
