India is a land of various chutney and pickles. Chutney is an Indian condiment or relish that can be thick or smooth, tangy, spicy or sweet and can be made of herbs or veggies or even fruits. There is hardly anything in a typical Indian platter that is as versatile as a chutney. This Khajur-Imli ki chutney is possibly one of the most popular Indian chutney there is out there. Khajur is a Hindi word for dates, while Imli is a Hindi word for Tamarind. Khajur has a dense, sweet flavour, while Imli has a sharp, tangy flavour, together they spell magic, and perhaps that’s why they are commonly served with samosas, gol gappas, pakodas and almost all Desi snacks up North.  

To make Khajur-Imli ki chutney, you need to take dates, tamarind, and spices like black pepper, ginger powder etc in a pressure cooker and cook until soft. Strain the mixture, grind the mixture and strain again to get a smooth chutney. Making this chutney is much more easier than you think.
