An amazing dish is that of Egg Masala Curry where boiled eggs are just simmered in spicy masala gravy. It has a nice tangy taste of tomatoes coupled with the flavors and taste of the dry whole spices that are used.
STEP 1.Heat oil in a pan. Add Kashmiri Red Chilli Powder, Turmeric & Salt.
Poke Boiled Eggs with a toothpick & add to the seasoned oil, pan fry for couple of minute till they are coated with the seasoning. Set aside
Heat Oil in a pan on medium to high. Add bay leaves, cloves, cinnamon & cumin. Sauté till aromatic & add onions and green chilies.
Sauté until golden brown. Add minced ginger and garlic & cook until the raw smell disappears.
Add coriander powder, kashmiri lal mirch, turmeric & salt. Mix well and cook for 2 minutes. Add Tomatoes and mix well. Cook on low for 7-8minutes till tomatoes are soft & release oil. Add water and mix well, then add cream.
Cover pan & cook for 3 to 5 minutes on medium heat.
Remove lid, add Garam Masala and mix well.
Add seasoned eggs and Coriander.
Cover and cook for 2 more minutes on low.
Serve with Plain Rice or paranthas.
