Directions : Chinese Spicy Lime Chicken Salad Recipe

STEP 1.1 fill a pan with 1 litre water, 2 chicken breasts, 5 gm thinly sliced ginger, ½ an apple thinly sliced and 1 star anise.

STEP 2.2 boil the chicken for 25 minutes.

STEP 3.3 then remove the chicken from the water and allow it to cool.

STEP 4.4 when the chicken has cooled, shred it and place it in a mixing bowl.

STEP 5.5 add 1 tbsp soy sauce, ¼ cup chicken stock, 30 gm finely chopped coriander , 5 gm finely chopped ginger,3 finely chopped cloves of garlic, 3 finely chopped small red chillies, salt to taste and the juice of ½ a lime.

STEP 6.6 mix all the ingredients together well.

STEP 7.7 transfer to a serving bowl.
