Ingredients for Chinese Tofu With Spicy Chicken Recipe

  • 200 gram Cooked chicken shredded
  • 230 gram Tofu cut into bite size chunks
  • 1 teaspoon Red peppercorns
  • 10 gram finely chopped Coriander
  • 10 gram Gingerfinely chopped
  • 4 Garlic finely chopped cloves
  • 3 Dried red chillies finely chopped Nos
  • 1 No.s Spring onion finely chopped
  • 1 teaspoon Chicken powder
  • 1 teaspoon Oil for chicken marinade
  • 2 tablespoon Sichuan bean sauce
  • 50 milliliter Chicken stock or water
  • 1 tablespoon Light soy sauce
  • 1/2 teaspoon Cornflour
  • 20 milliliter Water
  • 1 tablespoon Chilli oil
  • As required Salt

Directions: Chinese Tofu With Spicy Chicken Recipe

step 1

  • STEP 1.1into a mixing bowl shred 200 gm cooked chicken, add ½ tsp chicken powder, salt to taste and 1 tsp oil. Mix well together and leave to marinate for 10 minutes.

  • STEP 2.2in a small pan add 1 ltr of water and ½ tsp salt and bring to a boil.

  • STEP 3.3add 230 gm tofu cut into bite size chunks and boil for 30 seconds.

  • STEP 4.4using a slotted spoon or a sieve remove and drain the tofu. Keep aside.

  • STEP 5.5in a wok heat 1 tbsp oil, add 1 tsp red peppercorns, 3 finely chopped red chillies and fry for a few seconds.

  • STEP 6.6add the cooked marinated chicken and stir fry for 1 minute.

  • STEP 7.7add 10 gm finely chopped ginger, 4 cloves finely chopped garlic and stir fry for 10 seconds.

  • STEP 8.8at this stage add 1 tbsp light soy sauce, 1 tbsp chilli oil and the blanched tofu pieces. Mix together gently and stir fry for a few seconds.

  • STEP 9.9then add 50 ml boiling water or chicken stock and bring to a boil.

  • STEP 10.10add 2 tbsp sichuan bean sauce, ½ tsp chicken powder and salt to taste.

  • STEP 11.11stir and mix well to ensure that all ingredients are well combined without breaking the tofu pieces.

step 12

  • STEP 12.12continue to boil for 1 minute.
