Easy and quick recipe to prepare.This is a type of a healthy and delicious preparation of carrots cooked with methi (fenugreek )leaves and flavoured with green chilli ginger, garlic and spices.Made up of many ingredients and spices.Spicy in taste.
STEP 1.-1)in a pan add 2 tbsp oil, when hot add 1 chopped onion and saute till the onion is light brown.
STEP 2.-2)then add ½ tsp green chilli ginger paste and 3 minced cloves of garlic. Statue till the raw smell of the ginger garlic goes.
STEP 3.-3)next add 4 medium size carrots chopped and 350 gms chopped methi leaves.mix well to combine all the ingredients in the pan.
STEP 4.-4)then add ½ tsp turmeric powder, 1 tsp salt and mix. Cover and cook on low heat till the carrots are soft.
STEP 5.-5)when the carrots are cooked, add 1 tbsp coriander- cumin powder and 1 tsp lemon juice. Mix well and turn off the heat.
STEP 6.-6)carrot methi subzi is ready. Serve hot with roti.
