-1)in a pan add 2 tbsp oil, when hot add 1 chopped onion and saute till the onion is light brown.
-2)then add ½ tsp green chilli ginger paste and 3 minced cloves of garlic. Statue till the raw smell of the ginger garlic goes.
-3)next add 4 medium size carrots chopped and 350 gms chopped methi leaves.mix well to combine all the ingredients in the pan.
-4)then add ½ tsp turmeric powder, 1 tsp salt and mix. Cover and cook on low heat till the carrots are soft.
-5)when the carrots are cooked, add 1 tbsp coriander- cumin powder and 1 tsp lemon juice. Mix well and turn off the heat.
-6)carrot methi subzi is ready. Serve hot with roti.
