Delicious baby potatoes cooked with sauteed methi (fenugreek)leaves and spices. Aloo methi combines methi leaves (fenugreek greens) with the humble potato, aloo or alu as it is called in Hindi. The lightly roasted soft potatoes and the distinct bitterness of methi leaves make this aloo methi bhaji a super delicious dish on the whole. Perfect to be mopped with chapathi, roti or paratha or as a side with some rice and dal.

Ingredients for Aloo Methi Sabji Recipe

  • 500 gram Baby Potatoes
  • 200 gram Methi leaves
  • 1 No.s Onions
  • 2 tablespoon Mustard oil
  • 1 teaspoon Cumin seeds
  • 1 inch Ginger finely chopped
  • 4 No.s Garlic Cloves Finely Chopped
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Amchur powder
  • 2 No.s Bay leaf
  • 2 stick cinnamon inch
  • 1 teaspoon Coriander powder
  • 1 teaspoon Garam masala powder

Directions: Aloo Methi Sabji Recipe

step 1

  • STEP 1.Wash, boil and peel 500 gram baby potatoes. Keep aside.

step 2

  • STEP 1.In a preheated pan add 1 tsp oil, 200 gm chopped methi leaves. Stir for about a minute till methi leaves become soft, add a little salt and stir. Do not overcook at this stage. Turn off the heat and keep it aside.

  • STEP 1.In a preheated pan add 2 tbsp mustard oil and 1 tsp cumin seeds and allow it to crackle. Then add 1chopped onion, 1 inches chopped ginger, 4 cloves of chopped garlic.

  • STEP 1.Saute the onions till they are soft, tender and lightly caramelised.

step 5

  • STEP 1.Then add 500 gm of boiled and peeled potatoes. Add ½ tsp turmeric powder, 1 tsp red chilli powder, 1 tsp amchur powder, 2 torn bay leaf, 2inch stick cinnamon broken, 1 tsp coriander powder, 1 tsp garam masala powder.

  • STEP 1.Mix well and cook the potato for 10 minutes on low to medium heat till the masalas get well absorbed by the potatoes.

step 7

  • STEP 1.Then add the pre-cooked methi leaves and toss for a minute. Mix well and turn off the heat.
