STEP 1.Place the pork on a tray and drizzle olive oil and season both sides. Set aside.
STEP 1.For migas cut the tips of asparagus and slice them. Set aside. Heat a large non stick pan and add olive oil to cook bacon. Cook for 3-5 minutes until golden. Drain and set aside.
STEP 2.Place the bread in a bowl and add ½ cup hot water. Take the bread out and squeeze it as well. Now add parsley, garlic and asparagus in a large frying pan.
STEP 3.Cook for 1-2 minutes. Now add this to the moist bread bowl and add vinegar and bacon. Mix well.
STEP 4.Heat a pan again with olive oil and place the bread mixture while compressing. Cook for 8 minutes until crispy. Transfer to a plate.
STEP 5.Preheat the barbeque pan and grill pork for 5 minutes. Let it rest for 10 minutes. Cut the migas and place on a large plate. Top with pork and bacon slices and garnish with parsley and asparagus.
