• 1 pound Baby eggplant, cut into 1/2 cubes
• Olive oil
• Salt and pepper
• 0.5 cup Extra virgin olive oil
• 2 tablespoon Freshly squeezed lemon juice
• 2 tablespoon Water
• 1 Cloves Garlic, Peeled
• 2 tablespoon Za'atar
• 1 teaspoon Salt
• 1 teaspoon Sugar or maple syrup
• 1 pound Pasta, gluten free if desired
• 1 pint Cherry tomatoes, chopped
• 4 ounce Vegan cheese
• Za'atar, toasted sesame seeds, and/or fresh parsley for garnish
