Ingredients for Millet Cottage Cheese Rolls With Za'Atar Recipe

  • 8 Bread slices
  • 1 cup Cooked foxtail millet
  • 200 gram Paneer crumbled
  • 1 teaspoon Cumin powder
  • As required Za’atar spice mix
  • As required Butter to grease
  • As required Sesame seeds to roll
  • bunch A coriander leaves chopped
  • As required Salt

  • STEP 1.Preheat the oven to 200 degrees celsius.

  • STEP 2.Grease baking sheet

  • STEP 3.Cook ¼ cup of millet in a pressure cooker with water, similar to cooking lentils (dal). Cook till millets are soft and mushy

    • STEP 4.1in a mixing bowl add 200 gm crumbled paneer, 1 cup soft cooked millets, za’atar spice mix as desired, 1 tsp cumin powder, salt to taste and chopped coriander leaves. Mix together till all the ingredients are well combined. Filling for the rolls is ready.

    • STEP 5.2trim the hard crust edges off the slices of bread.

    • STEP 6.3on a flat surface, usea rolling pin to roll each slice of bread to make it thin and easy to fill and fold.

    • STEP 7.4put a spoonful of the za’atar flavoured mixture in the centre of the bread. Dampen the edges of the slice with water and fold them over to tightly seal the filling in. Pinch the edges together.

    • STEP 8.5dip the bread rolls in melted butter and then roll in a za’atar and sesame seed spice mix.

    • STEP 9.6place the prepared rolls on the greased baking sheet in a tray and place them in the oven to bake for 15 to 20 minutes till the crust turns golden and crisp.

    • STEP 10.7transfer to a platter. Drizzle with date sauce or chutney and serve.
