Directions : Urulaikizhangu Roast/Potato Roast Recipe

STEP 1.Pressure cook 3 potatoes till cooked but still firm.

STEP 2.In a preheated pan add 2 tbsp oil, ½ tsp mustard seeds, ½ tsp cumin seeds and allow to crackle. Add ¼ tsp asafoetida and 1 sprig curry leaves torn. Give it a stir.

STEP 3.Next add 3 boiled, peeled and diced. Increase the heat and toss the potatoes. Add salt and saute for a few seconds. Then add 1 tsp red chilli powder, ¼ tsp turmeric powder.

STEP 4.Turn heat to medium high and saute potatoes. keep stirring so that potatoes do not stick to the bottom of the pan. Roast for 4 to 5 minutes till the potatoes form a crispy crust. Turn off the heat.
