• 8 Boneless chicken thighs chopped into bitesize chunks
• 1 tablespoon Dark soy sauce
• 1 tablespoon Light soy sauce
• 2 tablespoon Chinese rice wine
• 0.25 teaspoon White pepper
• 2 tablespoon Cornflour cornstarch
• 240 milliliter Sunflower oil
• 1 tablespoon Sesame oil
• 1 Onion peeled and chopped into chunks
• 5 piece 25 dried red chillies chop them into smal es and leave the rest whole
• 1.5 teaspoon Sichuan peppercorns ground using a pestle and mortar
• 3 Cloves garlic minced
• 2 teaspoon Minced ginger
• 5 Spring onions scallions roughly chopped
• 2 tablespoon Light soy sauce
• 1 tablespoon Chilli bean paste
• 1 tablespoon Sugar
