  • 2 Boneless chicken thighs chopped into bitesize chunks
  • 1/4 tablespoon Dark soy sauce
  • 1/4 tablespoon Light soy sauce
  • 1/2 tablespoon Chinese rice wine
  • 0.06 teaspoon White pepper
  • 1/2 tablespoon Cornflour cornstarch
  • 60 milliliter Sunflower oil
  • 1/4 tablespoon Sesame oil
  • 1/4 Onion peeled and chopped into chunks
  • 1.25 piece 25 dried red chillies chop them into smal es and leave the rest whole
  • 0.38 teaspoon Sichuan peppercorns ground using a pestle and mortar
  • 3/4 Cloves garlic minced
  • 1/2 teaspoon Minced ginger
  • 1.25 Spring onions scallions roughly chopped
  • 1/2 tablespoon Light soy sauce
  • 1/4 tablespoon Chilli bean paste
  • 1/4 tablespoon Sugar
