0.75 pound Breakfast sausage of your choice i like to use a spicy or hot variety
1 Medium sweet yellow onion roughly chopped
1 Red or yellow bell pepper roughly chopped, or 6 mini peppers, roughly chopped
4 cup Handfuls about 6 chopped baby beet greens or baby spinach leaves
1 Eggs per person
