Ingredients For Brown Sugar Roasted Chicken Enchiladas W/Fire Roasted Tomatillo-Cranberry Sauce. Recipe
1 pound boneless skinless chicken breast
2 tablespoon butter softened
2 tablespoon Brown Sugar
2 teaspoon chili powder
1 teaspoon smoked paprika
0.5 teaspoon salt and pepper
1 cup sharp white cheddar cheese shredded
1 cup smoked gouda cheese shredded
16 corn tortillas
1 chopped jalapeno juice of 1 lime, fresh cilantro, sliced avocado and cotija cheese, for serving
2 pound tomatillos
1.5 cup fresh cranberries plus 1/2 cup chopped cranberries, for garnishing
4 cloves garlic skins
1 tablespoon olive oil
2 chipotle chilies adobo use 1 for less heat
2 tablespoon tomato paste
1 tablespoon honey
2 cup Chicken Broth
0.25 cup canned coconut milk or cream
As required Salt
0.5 cup fresh cilantro chopped
