This easy fall recipe has almost all of our favorite autumn ingredients, starting with acorn squash. From there, the squash is stuffed with turkey sausage, dried cranberries, chopped apples, and swiss chard. It's like a mini thanksgiving feast.

1 pound 2 acorn squash, halved lengthwise and seeded
1 tablespoon Olive oil
8 ounce Uncooked turkey or chicken sausage, casings removed if present
1.5 cup Chopped apple
0.5 cup Halved and sliced leek
1 tablespoon Chopped fresh thyme
2 teaspoon Chopped fresh sage and/or rosemary
2 Cloves garlic, minced
0.5 teaspoon Black pepper
0.25 cup Reduced sodium chicken broth
2 tablespoon Cider vinegar
2 cup Swiss chard, fresh baby spinach, and/or kale
