STEP 1.Step -1 Soak the rice for 1 hour Step-2 In heavy bottom pan add milk and wait for a boil, then lower flame and simmer for 4-5 minutes by adding cardamom + bay leaf. Step-3 Then add soaked and drained rice, cook till rice is soft under medium flame. Step-4 Cook under medium flame for 10 - 14 minutes. Step-5 Now add sugar + cashews only and simmer for 8-10 minutes. Step-6 Lastly add ghee and simmer for 2 minutes more. Switch off flame and then add raisins. Payesh / Kheer is done and let it come to room temperature. Step-7 After cooling, refrigerate it. Garnish with dry fruits of your choice. Step -8 Serve after 4-5 hours of cooling as it tastes much better. Serve chilled.
