STEP 1.In a mixing bowl take 1 cup rava, ½ cup curd and ¾ tsp salt.
STEP 2.Combine everything well.
STEP 3.Then add ½ cup water and mix well adjusting consistency.
STEP 4.Let the batter rest for 20 minutes
STEP 5.Now prepare the vegetable toppings in a bowl, by adding 1 chopped onion, ½ chopped capsicum, 1 chopped carrot and 1 chopped tomato and then add 2 tbsp coriander, 1 inch ginger, 1 chilli, few curry leaves and ¼ tsp salt.
STEP 6.Combine the spices well in the vegetables.
STEP 7.In a greased pan at medium flame pour the batter and spread a little.
STEP 8.Add the prepared vegetable topping with a tbsp and press gently.
STEP 9.Pour 1 tsp oil around the uttapam.
STEP 10.Cover the pan with a lid and cook for a minute or until the base is cooked well.
STEP 11.Flip over and cook both sides.
STEP 12.Serve hot on a plate and enjoy.
