STEP 1.In a preheated pan add 1 tbsp ghee, ½ tsp fennel seeds, 2 cardamoms, ½ inch cinnamon stick and 1 bay leaf torn. Saute and allow the spices to sizzle.

STEP 1.Next add 1 inch finely chopped ginger, 6 cloves of garlic finely chopped and 2 slit green chillies. Saute for 30 seconds.

STEP 1.Then add 2 onions thinly sliced and saute till onions soften and turn slightly brown.

STEP 1.Add 1 cup washed basmati rice, 2 cups water and salt to taste and saute for about a minute.

STEP 1.Pressure cook for 2 whistles and allow the pressure to release naturally.

STEP 1.In a preheated pan add 1 tbsp ghee, 200 gms paneer cubes, ¼ cup steamed peas and salt to taste.

STEP 1.Saute for a minute till the paneer softens.

STEP 1.Spoon the cooked rice into a serving bowl and add the sauteed peas and paneer. Mix to combine.

STEP 1.Garnish with chopped mint leaves.
