• 2 ounce 16 total boneless, skinless chicken breasts
• 0.5 teaspoon kosher salt
• As required Black pepper
• 3 tablespoon finely chopped fresh herbs, I used thyme, oregano and basil
• 2 cloves garlic, crushed
• 6 tablespoon good quality Dijon mustard, I like Maille Dijon Originale
• 1 cup whole wheat panko
• 0.25 cup freshly grated Parmesan cheese
• 1 tablespoon olive oil
• minced parsley for serving, optional
