Ingredients For Mediterranean Quinoa Salad Recipe

• 0.6699999999999999 cup Uncooked quinoa
• 1.33 cup Chicken broth, i use low sodium
• 1 cup Chopped olives, drained and sliced in 1/2
• 1 Jar diced roasted red bell peppers, drained
• 1 cup Diced cucumbers
• 1 cup Chopped tomatoes
• 2 Green onions, finely chopped
• 0.25 cup Chopped fresh cilantro or basil
• 0.5 cup More to taste feta cheese, crumbled
• 3 tablespoon Olive oil
• 2 tablespoon Red wine vinegar
• 1 tablespoon Fresh lemon juice
• 1 Clove garlic, finely minced or pressed through a garlic press
• pinch Pinch of dried oregano
• 0.25 teaspoon Salt and pepper to taste, start with about each and add more, if needed
