  • 0.11 cup Uncooked quinoa
  • 0.22 cup Chicken broth, i use low sodium
  • 0.17 cup Chopped olives, drained and sliced in 1/2
  • 0.17 Jar diced roasted red bell peppers, drained
  • 0.17 cup Diced cucumbers
  • 0.17 cup Chopped tomatoes
  • 0.33-1/2 Green onions, finely chopped
  • 1/25-0.06 cup Chopped fresh cilantro or basil
  • 0.08 cup More to taste feta cheese, crumbled
  • 1/2 tablespoon Olive oil
  • 0.33 tablespoon Red wine vinegar
  • 0.17 tablespoon Fresh lemon juice
  • 0.17 Clove garlic, finely minced or pressed through a garlic press
  • pinch Pinch of dried oregano
  • 1/25 teaspoon Salt and pepper to taste, start with about each and add more, if needed
