1 pound Portobello mushrooms, coarsely chopped
2 Medium onions, chopped
0.5 cup Chopped sweet red pepper
0.5 cup Chopped Green Pepper
3 tablespoon Brown sugar
2 tablespoon Chili powder
2 Garlic cloves, minced
1.5 teaspoon Ground Cumin
1 can Tomato paste
2 can Black beans, rinsed and drained
2 can Diced Tomatoes, Undrained
3 cup Mushroom or vegetable broth
0.25 cup Lime juice
2 tablespoon Minced fresh cilantro
1 tablespoon Minced chipotle peppers in adobo sauce
1 teaspoon Dried Thyme
1 teaspoon Dried Basil
0.5 teaspoon Salt
0.5 teaspoon Pepper
Optional toppings: shredded monterey jack cheese, sour cream and chopped green onions
