• 2 tablespoon Olive oil
• 1 pound Portobello mushrooms, coarsely chopped
• 2 Medium onions, chopped
• 0.5 cup Chopped sweet red pepper
• 0.5 cup Chopped Green Pepper
• 3 tablespoon Brown sugar
• 2 tablespoon Chili powder
• 2 Garlic cloves, minced
• 1.5 teaspoon Ground Cumin
• 1 can Tomato paste
• 2 can Black beans, rinsed and drained
• 2 can Diced Tomatoes, Undrained
• 3 cup Mushroom or vegetable broth
• 0.25 cup Lime juice
• 2 tablespoon Minced fresh cilantro
• 1 tablespoon Minced chipotle peppers in adobo sauce
• 1 teaspoon Dried Thyme
• 1 teaspoon Dried Basil
• 0.5 teaspoon Salt
• 0.5 teaspoon Pepper
• Optional toppings: shredded monterey jack cheese, sour cream and chopped green onions
