Cooking Directions

• STEP 1.In a heavy-bottomed pan, heat milk and bring it to a boil.
• STEP 2.Simmer the milk on low heat, stirring occasionally, until it reduces to half its original quantity.
• STEP 3.Add gulkand, condensed milk, cardamom powder, and chopped nuts to the reduced milk. Mix well.
• STEP 4.Pour the mixture into earthen pots (matka) or kulfi molds.
• STEP 5.Cover the pots with aluminum foil and freeze for at least 6-8 hours or until set.
• STEP 6.Garnish with chopped nuts and serve the matka gulkand kulfi chilled.

Cooking Tips

• You can add a few strands of saffron soaked in warm milk for a richer flavor and aroma.
• For a variation, you can add rose syrup or rose water to enhance the rose flavor.
• If you don't have earthen pots, you can use popsicle molds or small cups for setting the kulfi.

Storage and Serving

• Matka gulkand kulfi can be stored in the freezer for up to a week.
• Serve it chilled as a refreshing dessert on hot summer days.
