STEP 1.In a preheated pan, add 1 tbsp coriander seeds, ½ tsp ajwain (carrow) seeds, ½ tsp fennel( saunf) seeds, ½ tsp black peppercorns, 1 inch cinnamon (dalchini) stick, 2 dry red chillies, 3 cloves(lavang), 1 black cardamom (badi elaichi), 1 stone flower, 1 star anise. Dry roast for 3 to 4 minutes till the aroma of the spices comes through.

STEP 1.Empty the roasted spices into the small jar of the mixer grinder and grind to a smooth powder.

STEP 1.Preheat a pan and add 1 tbsp oil, ¼ tsp asafoetida (hing), 500 gms bhindi ( ladies finger/okra) cut into 1 inch pieces. Add1 tsp salt. Cook until bhindi is soft.

STEP 1.Once cooked add the malvani masala powder and ¼ cup crushed roasted peanuts. Stir well to combine. Turn off the heat.
