• 8 ounce Soba Noodles
• 1 bunch Scallions, diced
• 5 Small cucumbers, sliced into thin 0.5 moon shapes. i use persian cucumbers
• 1 inch Ginger, peeled and grated
• 1 can Red chili pepper, diced. youalso use a dash of sriracha sauce
• A handful of fresh thai basil, regular basil or mint, chopped or torn
• 1 tablespoon Regular or lower sodium soy sauce or to your taste
• 2 teaspoon Sesame oil or to your taste
• 2 tablespoon Sesame Seeds
