• 2 pound Pork tenderloins, 2 small pork tenderloin
• 2 tablespoon Jerk spice mix,
• 2 tablespoon Olive or vegetable oil
• 8 Wooden skewers, soaked in water for 20 30 minutes
• 1 cup Fresh or canned pineapple, diced
• 0.25 cup Red pepper, diced
• 0.25 cup Red onion, diced
• 0.25 cup Cilantro, chopped
• 2 tablespoon Jalapeno pepper, finely diced
• pinch Pinch red pepper flakes
• Lime zest
• 2 tablespoon Fresh lime juice
• 1.5 teaspoon Vegetable, olive or canola oil
• 1 teaspoon White sugar, may not need with canned pineapple
