This bagara baingan dish is prepared from roasted grinded paste along with tamarind water. It is tempered with bay leaf and cinnamon that gives it additional flavour.
STEP 1.Slit 6 brinjals and soak in salt water to prevent discoloration.

STEP 1.Into a preheated pan add 3 tbsp peanuts, 3 tbsp sesame seeds and roast for a minute.

STEP 1.Place the roasted nuts and seeds into the small grinding jar of the mixer grinder along with ¼ cup freshly grated coconut,½ cup warm water. Blend to make a smooth paste. Empty into a bowl and keep aside.

STEP 1.Into the grinding jar add 1 roughly chopped onion, 1 inch ginger chopped, 12 cloves garlic, 2 green chillies chopped and ¼ cup warm water to make a smooth paste. Keep aside.

STEP 1.In a preheated pan add 2 tbsp oil, ½ tsp mustard seeds, 1 bay leaf, 3 cloves and 1 inch cinnamon. To this add the onion , ginger garlic paste and saute for about a minute.

STEP 1.Then add ¼ tsp turmeric powder, 1 tsp red chilli powder, 1 tsp coriander powder, and 1 cup tamarind water. Mix well and then add the peanut sesame paste.

STEP 1.Stir all the ingredients together to mix well. Add water to adjust the consistency and salt to taste. Bring to a brisk boil for 3 to 4minutes.

STEP 1.In a preheated pan, add 2 tbsp oil, add the 6 slit soaked brinjals and salt to taste. Fry on medium heat till the brinjals are cooked stirring intermittently to ensure even browning.

STEP 1.Spoon the gravy masala into a serving bowl and add the fried roasted brinjals to the gravy.

STEP 1.Garnish with chopped coriander leaves.
