These Moroccan cookies are droplets from heaven. It's crunchy yet smooth and tastes just amazing. They are made from all-purpose flour, vanilla extract, eggs, and almonds.
STEP 1.Take a large flat plate, place the butter, powdered sugar, and pinch of salt, then mix all of them together using a spatula or your hands until the butter becomes a creamy texture.
STEP 2.Then add the egg, vanilla extract, and roughly chopped raw almonds. Continue combining until the mixture becomes cognate and well combined.
STEP 3.Add the flour little by little and mix well using a spatula (or your hands) until a smooth dough is formed, the goal is not to over-knead the dough.
STEP 4.Divide the dough in half, roll each half into a long cylindrical shape and cover the cylinders with a plastic wrap. Make sure to make a knot on both ends, now place the cylinders in the freezer for at least 1-2 hours before using them.
STEP 5.Once frozen remove the plastic wrap. Using a very sharp knife, cut the frozen cylinders into equal coins of 0.5 cm / 0,2 inches thickness.
STEP 6.Place the cookies on a baking sheet covered with parchment paper and bake the cookies in a preheated oven at 180°c (356°f) for 20 minutes or until they turn golden.
STEP 7.Let the cookies cool down completely before tasting. As they cool down, they become crunchy (you can freeze the cylinders for up to 2 months in the freezer and pull them out of the freezer before using them)
