This is a famous Assamese curry. Duck curry is a popular dish from the hearts of Kuttanad, a region which is fondly referred to as the nellara of Kerala (rice bowl of Kerala state) for its plenty plantations of rice.
STEP 1.1. Cut the duck into small pieces. Marinate the pieces with salt, turmeric and lemon juice for 1-2 hours.
STEP 2.1. Take a pan, in hot oil add panchfuron, bay leaf and dry red chilli. When they are brown add onions and ginger garlic paste. Cook on medium flame for 10 minutes.
STEP 3.After 10 minutes add turmeric powder and salt. And add the marinated duck meat, cook on high flame for 20 minutes. now add the ingredients for masala mentioned above.
STEP 4.Add all the masala. Keep stirring. Add green chillies, add a tablespoon of dry red chilli paste (optional) .
STEP 5.Now add the cut potatoes and cook on medium flame. Add water as required. Put on the lid and cook for 20 minutes. Keep checking in between. It takes about an hour, add some cinnamon and cardamom powder. keep cooking on medium flame. Mash some potatoes.
STEP 6.Yummy duck meet is ready.
