• 3 Slices thick cut bacon, chopped
• 2 can Cannellini beans, drained and rinsed
• 1 can Diced tomatoes, drained
• 2 Garlic cloves, minced
• 0.5 Yellow onion, chopped
• 1 cup Vegetable broth
• 2 tablespoon Olive oil, divided, plus extra for drizzling
• 2 Slices of bread, chopped
• 2 tablespoon Fresh parsley, chopped and divided
• 1 tablespoon Parmesan cheese, grated
• As required Salt and pepper, to taste
• 2 tablespoon Unsalted butter, diced
