Ingredients For Chorizo And Polenta Lasagna Recipe
For the polenta
1 quart low sodium chicken stock
1.25 cup quick cooking polenta
Kosher salt
2 tablespoon unsalted butter melted
For the chorizo sauce
1 tablespoon extra virgin olive oil
1 small onion diced
1 pound ground pork
2 tablespoon Paprika
1 tablespoon granulated garlic
1 tablespoon onion powder
1 teaspoon chili powder
1 teaspoon ground cumin
Kosher salt and freshly cracked pepper
2 tablespoon red wine vinegar
4 cloves garlic minced
1 ounce 14 can diced fire roasted tomatoes
For the lasagna
1 bunch large spinach you could also use frozen spinach
1 tablespoon extra virgin olive oil plus more for the pan
1 clove garlic minced
Kosher salt and freshly cracked pepper
1 cup grated pepper jack cheese
1.5 cup grated mozzarella cheese
1.5 cup grated cheddar cheese
