Directions : Chinese Spicy Chicken With Honey Recipe

STEP 1.1 in a wok heat 2 tbsp oil, add 1 tsp sichuan peppercorns, 7 dried red chillies and fry for a few seconds.

STEP 2.2 add 4 finely chopped cloves of garlic, ½ cm finely chopped ginger and ½ finely chopped spring onion and fry for a few seconds.

STEP 3.3 then add 8 drumsticks cut into two equal pieces each with knuckles removed and stir fry for 5 minutes till the meat turns white.

STEP 4.4 pour 2 tbsp dark soy sauce over the chicken and stir to ensure the chicken pieces are evenly coated with the soy sauce.

STEP 5.5 fry for 1 to 2 minutes and then cover the wok.

STEP 6.6 turn the heat to low and cook for 25 to 30 minutes stirring regularly.

STEP 7.7 once the meat is tender, turn the heat to high and add salt to taste and 2 tbsp clear honey.stir fry for 1 minute.

STEP 8.8 remove from the heat. Garnish with the remaining half chopped spring onion and serve hot.
