6 chicken thighs
2 red peppers, sliced
1 large onion, sliced
2 tablespoon extra virgin olive oil
0.5 piece chorizo sausage, cut into " 5 oz
2 ounce sun dried tomatoes in oil, sliced
2 large cloves garlic, chopped
1 tablespoon tomato paste
0.5 teaspoon hot paprika
1 cup basmati rice
295 milliliter chicken stock
177 milliliter dry white wine
0.5 orange, cut into wedges large
1 teaspoon chopped fresh thyme
2 ounce pitted black olives

Directions : Chicken Basquaise Recipe

STEP 1.Season the chicken with salt and pepper.

STEP 2.Heat 2 tbsp olive oil in the dutch oven or braiser and brown the chicken pieces – three at a time – on both sides.

STEP 3.Add the onion and peppers and allow them to slightly, stirring occasionally.

STEP 4.Add the chorizo, sun-dried tomatoes and garlic and cook until the chorizo has taken on some colour.

STEP 5.Stir in the rice and, coating the grains in oil, add the tomato paste, paprika and thyme.

STEP 6.Pour in the stock and wine then bring it to a gentle simmer.

STEP 7.Place the chicken on top, with the wedges of orange, hot pepper, and scatter with the olives.

STEP 8.Cover with a tight-fitting lid and cook over low heat for about 50 minutes to an hour or until the rice is cooked.
