Ingredients for Chicken Basquaise Recipe

  • 6 chicken thighs
  • 2 red peppers, sliced
  • 1 large onion, sliced
  • 2-3 tablespoon extra virgin olive oil
  • 1/2 piece chorizo sausage, cut into " 5 oz
  • 2 ounce sun dried tomatoes in oil, sliced
  • 2 large cloves garlic, chopped
  • 1 tablespoon tomato paste
  • 1/2 teaspoon hot paprika
  • 1 cup basmati rice
  • 295 milliliter chicken stock
  • 177 milliliter dry white wine
  • 1/2 orange, cut into wedges large
  • 1 teaspoon chopped fresh thyme
  • 2 ounce pitted black olives
  • As required Hot Pepper
  • As required Salt and freshly ground black pepper

Directions: Chicken Basquaise Recipe

  • STEP 1.Season the chicken with salt and pepper.
  • STEP 2.Heat 2 tbsp olive oil in the dutch oven or braiser and brown the chicken pieces – three at a time – on both sides.
  • STEP 3.Add the onion and peppers and allow them to slightly, stirring occasionally.
  • STEP 4.Add the chorizo, sun-dried tomatoes and garlic and cook until the chorizo has taken on some colour.
  • STEP 5.Stir in the rice and, coating the grains in oil, add the tomato paste, paprika and thyme.
  • STEP 6.Pour in the stock and wine then bring it to a gentle simmer.
  • STEP 7.Place the chicken on top, with the wedges of orange, hot pepper, and scatter with the olives.
  • STEP 8.Cover with a tight-fitting lid and cook over low heat for about 50 minutes to an hour or until the rice is cooked.
